Spiced Maple Pecan Granola

Ingredients:

2 cups extra thick rolled oats

1/2 cup raw pumpkin seeds (pepitas)

1/4 cup chia seeds

1 cup pecans, halved

1 tbsp ground cinnamon

1/2 tsp nutmeg

1/2 tsp kosher salt

1/2 tsp ground ginger

1/4 cup maple syrup

2 tbsp liquid virgin coconut oil

2 tsp pure vanilla extract

How to make:

1. Preheat oven to 300°F.

2. Combine all the dry ingredients in a large bowl.

3. In a separate bowl, combine wet ingredients and mix until smooth. Pour wet mixture into dry. Mix until granola is evenly coated.

3. Spread granola evenly in a single layer on a rimmed baking sheet and bake for 25 – 35 minutes, give it a stir half way through. They should be toasted and golden when they come out of the oven.

4. Let granola cool completely before storing.
