Roasted Cauliflower

[serves 2-4]

Ingredients:

1 small cauliflower, core removed and cut into florets

1 red onion, cut in half lengthwise, then cut into wedges

3 tbsp extra virgin olive oil

1 tsp ground tumeric

1 tsp curry powder

1 tsp garlic powder

1/4 tsp ground cinnamon

3 tbsp freshly squeezed lemon juice

1/4 cup pitted dates, chopped

1/4 cup pepitas

1 tsp kosher salt

Freshly ground black pepper, to taste

How to make:

1. Preheat oven to 450°F. Line a large baking sheet with parchment paper.

2. Combine cauliflower and onions in a large mixing bowl. Add olive oil, tumeric powder, curry powder, garlic powder, cinnamon, lemon juice, salt & pepper and toss well.

3. Transfer cauliflower to prepared baking sheet and spread evenly. Bake for 20-25 minutes. With 5 minutes remaining, sprinkle pepitas over cauliflower.

4. Remove cauliflower from the oven. Top with chopped dates. Enjoy on its own or serve as a side!
