Who doesn’t like bright pink pickled onions?? I sure do like them. I add it to my avo toast, burgers, salads, nachos, and the list goes on. They add great complexity, texture, and a pop of colour to any dish. They are super easy to make and can last up to 3 weeks in the fridge. Give them a try!
Ingredients:
1 red onion, thinly sliced
1 cup water
1/2 cup apple cider vinegar
1 1/2 tbsp maple syrup
1 1/2 tsp kosher salt
2 cloves garlic, cut in half
How to make:
1. Thinly slice the red onions, use a mandolin if you have one.
2. Combine apple cider vinegar, water, maple syrup, salt and garlic in a large bowl.
3. Add onions to mixture, soak for 1 hour.
4. Transfer to a 1L glass jar. I like to keep my empty jam and pasta sauce jars as they are the perfect size for pickling and storing food.
5. Store in the fridge for up to 3 weeks.
