Oatmeal Chocolate Chip Cookie

[makes 12 cookies]

Ingredients:

1 cup (146g) quick cooking steel cut oats

1 cup (140g) whole wheat flour

1 /4 cup (37g) coconut sugar

1 tbsp maca powder

1 tsp baking soda

1 tsp ground cinnamon

1/4 tsp kosher salt

1/4 cup avocado oil

1/4 cup almond butter

3 tbsp almond milk

1 large egg

1 tsp pure vanilla extract

1/4 cup semi-sweet chocolate chips

How to make:

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. In a medium bowl, add oats, flour, maca powder, baking soda, cinnamon, and salt. Mix to combine.

3. In a large bowl, mix sugar and oil until smooth. Add in almond butter, almond milk, egg, and vanilla. Mix until combined.

4. Add dry ingredients to large bowl of wet mixture. Mix until dough starts to form. Fold in chocolate chips.

5. Scoop and press batter into a medium (2inches) cookie scoop tightly then drop onto baking sheet lined with parchment paper.

6. Bake for 10-12 minutes. Let cool for 5 minutes on baking sheet, then transfer to wire rack to finish cooling.
