Know someone in your life that has a massive sweet tooth? Well, I am that girl. I will eat dessert before my dinner AND after. I will choose sweets over savoury any day.
Since I eat sweets pretty much all day long, I always try to bake the healthiest version (without compromising the flavour) so I can indulge in guilt free. These perfectly gooey brownies are exactly that. I made it with almond flour and AVOCADOS! I’ve attempted to bake lots of healthy brownies before and these are by far the most successful.
Healthy Gooey Brownies
Ingredients:
1 cup superfine almond flour
1/4 cup cocoa powder
1 tsp baking soda
Pinch of salt
3/4 cup semi-sweet mini chocolate chips
1 large avocado, roughly 1 cup
1/4 cup agave
2 large eggs
2 tsp pure vanilla extract
1 tbsp unsalted butter
How to make:
- Preheat oven to 350º F and line a 8x8in pan with parchment paper.
- Mix the avocado, agave, eggs, pure vanilla extract, & unsalted butter in a food processor or blender until combined.
- Pour the wet mixture into a large mixing bowl.
- In a separate bowl, combine superfine almond flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture and combine. Fold in 1/2 cup semi-sweet mini chocolate chips until just combined.
- Pour and scrape batter into baking pan lined with parchment paper, and smooth out the top with a spatula.
- Sprinkle remaining 1/2 cup semi-sweet mini chocolate chips on top of the batter.
- Bake in middle rack of preheated oven at 350º F for 25-30 minutes.
- Remove from the oven and allow to cool for 30 minutes. Slice and enjoy!
