Energy Date Ball rolled in coconut
Energy Date Balls
[makes 10 balls]

Ingredients:

1 cup date paste

1/4 cup water

1 cup rolled oats

1/4 cup walnuts

2 tbsp almond butter

2 tbsp hemp hearts

2 tsp orange zest

1/4 cup coconut shreds, to coat

How to make:

1. Using a food processor, pulse walnuts and rolled oats together for about 30 seconds. Transfer to a medium bowl.

2. Add hemp hearts and orange zest. Mix well.

3. Make the date paste by adding dates and water to the food processor, purée until it becomes a paste. Alternatively, you can soak dates in warm water for about 10 minutes, then drain the water.

4. Add almond butter and date paste to dry mixture. Using a wooden spoon, mix to combine.

5. Shape dough into balls – scoop paste into hand and roll with your palms.

6. Roll balls in coconut shreds to coat them.

7. Set in freezer for 15 minutes and they’ll be ready to eat.

8. Store them in container for up to 1 week in the fridge or up to 3 weeks in the freezer.
