Dragon Fruit Smoothie Treat

[makes 6]

Ingredients:

Base:

1 cup unsalted cashews

6 pitted dates, soaked in boiling water for 5 minutes to soften

1/2 tsp ground cinnamon

1 tsp pure vanilla extract

Pinch of salt

Middle:

1 red dragon fruit

1 frozen banana

1/4 cup coconut milk

Topping:

1/4 cup cacao powder

1/4 cup pure maple syrup

1 tsp pure vanilla extract

How to make:

1. Pulse cashews, cinnamon, vanilla extract, and salt in a food processor for about 1 minute or until it becomes a crumbly almost paste texture. Add soaked dates and pulse for another 45 seconds.

2. Scoop cashew mixture evenly into a 6 cup silicone muffin mold. Press and flatten crust with the back of a spoon.

3. In a blender, add dragon fruit, banana, and coconut milk. Blend until smooth. Pour smoothie in the silicone mold over cashew crust. Filling about 3/4 of the way. Place the mold in the freezer for 15 minutes.

4. In a small bowl, mix cacao powder, maple syrup, and vanilla extract until smooth. Take silicone mold out of the freezer and pour chocolate sauce over the smoothie layer.

5. Place silicone mold back in freezer and freeze overnight or for at least 6 hours (the longer the better).
