Feeling lazy but want to eat something delicious? This simple bruschetta recipe is exactly that. Quick to make and will satisfy your cravings.
[serves 2]Ingredients:
4 slices of artisan bread
1 tbsp extra virgin olive oil
2.5 tbsp fresh basil, shredded
120g cherry tomatoes, quartered
1 tsp extra virgin olive oil
65g whole milk ricotta
1/4 cup avocado oil
kosher salt, to tast
fresh ground pepper, to taste
How to make:
1. Turn oven on broil for 450°F. Line a baking tray with parchment paper.
2. Toss tomatoes, olive oil, 2 tbsp basil, and garlic in a mixing bowl. Season with salt and pepper.
3. In a separate bowl, combine ricotta with remaining 1/2 tbsp basil. Season with salt and pepper.
4. Brush 1 tbsp olive oil on both sides of all 4 slices of bread. Bake for 5 minutes in the oven. Flipping halfway through.
5. Spread ricotta mixture evenly on bread. Top with tomato mixture. Lightly drizzle with olive oil and serve.
