Breakfast Cookies (V)

Ingredients:

1 1/4 cup extra thick rolled oats

1 cup almond flour

1/2 tsp baking soda

2 tbsp coconut sugar

1 tbsp ground cinnamon

2 tbsp maca powder

2 tbsp chia seeds

1/2 tsp salt

3/4 cup banana, mashed

1/4 cup almond butter

2 tbsp virgin coconut oil, melted

1 tsp pure vanilla extract

1/4 cup raisins

1/4 cup pepitas

How to make:

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. In a mixing bowl, add oats, almond flour, baking soda, coconut sugar, cinnamon, maca powder, chia seeds, and salt. Mix to combine.

3. In a large mixing bowl, add mashed banana, almond butter, coconut oil, and vanilla. Mix until smooth and combined.

4. Pour the dry ingredients into the wet and mix well until combined. Fold in the raisins and pepitas.

5. Scoop and drop batter onto lined cookie sheet using a 2in cookie scoop. Press and flatten each cookie. Bake for 15-20 minutes. Let cookies cool completely before storing.
