Ingredients:
2 tbsp sesame oil, for cooking
1lb extra lean ground beef
1 onion, sliced
2 inch ginger, minced
2 cloves of garlic, minced
1 cup corn
1 cup shiitake mushrooms
2 mini bell peppers, diced
1 carrot, cut julienne style
1 small zucchini, diced
Fried eggs
Sauce:
1/4 cup soy sauce
1 tbsp rice vinegar
1 tbsp honey
1/2 tbsp sriracha
Garnish:
Scallions, chopped
Sesame seeds
How to make:
1. Cook rice, follow instructions on package. Can be any type of rice.
2. Mix sauce together in a bowl, set aside.
3. Heat 1 tbsp sesame oil in a large skillet over medium – high heat. Add onions, garlic, and ginger. Cook for about 2 minutes or until it starts to brown.
4. Add beef and cook, breaking it up as you go. Cook until no longer pink, about 5 minutes.
5. Transfer beef, onions, garlic, and ginger onto a plate.
6. Return skillet to stove, add remaining 1 tbsp sesame oil.
7. Sauté carrots and zucchini, about 5 minutes. Stirring occasionally.
8. Add peppers, mushrooms, and corn. Continue stirring about 3 minutes.
9. Add beef back to skillet with sauteed vegetables.
10. Pour in prepared sauce mixture. Stir and cook about 2 minutes.
11. Turn off heat, serve beef over rice.
12. In separate nonstick skillet, add 1 tsp olive oil over medium-low heat. Gently crack eggs onto pan. Cook for about 2 minutes or until egg whites are completely set but yolks are runny.
12. Turn heat off. Serve fried egg over minced beef and rice.
13. Garnish with scallions and sesame seeds.
